Registered Dietitian and Nutritionist Activity Theory

Students hear directly from registered dietitians and nutritionists working in various occupational fields and deepen their knowledge of the role and mission of registered dietitians and nutritionists to meet society’s needs. Finding issues on their own and exchanging ideas with others, they set their own objectives to achieve what they see as the ideal registered dietitian and nutritionist.

Dietary Reference Intake

Students learn the dietary reference intake, which serves as the scientific basis for the nutritional assessments and proper nutritional and meal plans that registered dietitians and nutritionists prepare for individuals and groups. They will understand the basic theories and indicators and learn how to utilize the nutritional management process for subjects.

School Lunch Management Training

Students carry out a series of tasks from school lunch planning to implementation and evaluation in a self-directed manner and learn about the overall work of school lunch management based on the PDCA cycle. Breaking up into groups, they will decide topics, assign roles, and actually provide school lunch service at a school.

Basic Nutrition Lab

In this lab, students deepen their understanding of the metabolic capacity of different nutrients in the body, the relationship with genetics (individual variation), the relationship between food content and urinary excretion, taste sensitivity and changes thereof, and other topics learned via lectures (classroom) using their own bodies.

Psychology of Development and Education

Students get an overview of physical and mental development from early childhood to adolescence and learn the basic theories on learning processes, school education, child rearing, and at home education. The course also touches on the mental and physical development and learning processes of infants, children, and students with disabilities.
